Cashew StirFry
Cashew Stir Fry

Here's a recipe that's delicious and healthy, as well as
quick and easy to prepare.

STIR-FRIED VEGGIES WITH CASHEW NUTS

SERVES 4;
2 lbs mixed vegetables for stir-fry
2-4 table spoons sunflower or olive oil
2 garlic cloves, crushed
1 tablespoon grated ginger root
1/2 cup cashew nuts or 4 tablespoons sunflower seeds,
pumpkin or sesame seeds
soy sauce
salt and pepper

1)Prepare the vegetables according to type.

2)Heat a frying pan, then trickle the oil around the rim
so that it runs down to coat the surface. When the oil
is hot, ad that garlic and ginger and cook for 2-3
minutes, until they start to soften.

3) ad the softer vegetables and stir-fry everything
over high heat for 3-4 minutes.

4) Stir in the cashew nuts or seeds. Season with soy
sauce, salt and pepper. Serve at once.

Can be served alone, or on top of rice or crispy
noodles - Quick and Delicious!
