I was at the farmer's market this morning and they
had sweet potatoes so it must be about time to dig
mine.  With the cool spring tha we had only 2 of my
plants grew, but from the number of vines you
would never know it.  I hope that I have enough for
Thanksgiving.

Stove Top Sweet Potatoes

Depending on the size of the potatoes, use one per
person or if they are the mega ones, use one per
every two people.
1/4 -1/2 cup brown sugar
1-2 Tbsp butter
1-2 tsp cinnamon
1-2 tsp orange peel
2-4 Tbsp orange juice.

Peel and chop sweet potatoes into cubes.  I go fairly
small so they cook quicker.  In a skillet heat enough
vegetable oil to just cover the bottom of the pan.  
Add potato cubes and brown until tender stirring
often.
Add the butter until it melts, stir in the brown sugar
to melt it then add the rest of the ingredients.  Once
the sauce is bubbly and thickened some it is ready to
go.  It is a quick easy way to get the flavor of the
potaoes fixed in the oven, in a lot less time.  You
can add more or less of any of the ingredients to
your taste.  If you like it sauceier,  add more butter
and orange juice.
