Skillet Vegetables

This is another one of those recipes that you can use
what you have on hand and what you like.
Potatoes
Corn
Summer squash
Green beans
Onions
Garlic

Slice the potatoes,squash, and onions.  In a large skillet
heat some oil.  Add the potatoes.  After they have
browned awhile, add the onions and corn (if you don't
have any fresh corn you can use frozen instead),
browning for a few more minutes.  Add the squash, green
beans and garlic.  Place a lid on the skillet and steam for
about 10 minutes.  Remove the lid and stir every thing.  
Add herbs at this point.  Thyme is a good potato herb
which I use and black pepper.

If you want to leave this off it is OK with me but I brown
some polish sausage in the skillet before I add the
potatoes.  If you do this you don't need to add the oil.  For
Gene and I, I use one of those one pound packages of
polish sausage.
